Editor: Pappas, Apostolos
Apostolos Pappas, Ph.D., earned his Master of Science in Food Science and Nutrition and his doctorate in biochemistry. A research biochemist with Johnson & Johnson and a professional member of the Institute of Food Technology, he has received numerous awards and distinctions, including a Fulbright scholarship. Dr. Pappas's research and interests focus on lipid metabolism. A native of Greece, Dr. Pappas now lives in New York and New Jersey, where he enjoys his passions for cinema, music, and, of course, pairing his favorite wines to gourmet French meals.
Marie-Annick Courtier is a native of Paris, France, where she grew up around gourmet foods and wines. Chef Marie holds a Culinary Arts Degree, has worked with many world-renowned chefs, and runs her own personal chef service. A Certified Fitness Nutritionist and Professional Food Manager, she also teaches cooking and created the new Certified Personal Fitness Chef Program marketed by Dr. John Spencer Ellis, president of the National Exercise & Sports Trainer Association (NESTA). Chef Marie lives in Orange County, California.
